Why is it that when we use "I" in writing, it's capitalized, but when we use "you," it's not?

Spelling is largely a matter of convention. It's not a matter of ego. Modern and Middle English 'I' came to be written with a capital letter in order to make it a distinct word and avoiding misreading handwritten manuscripts. There wasn't any similar reason to capitalize other pronouns.

Did you have to look that up, or did you just know that particular tidbit of pronoun trivia? ;)
I spend my spare time doing a bit of linguistics. You'd be bored to tears with the little tidbits like this that I know.
On the contrary, I find it fascinating... :)
